EUGENE, Ore.—Twenty-two students, staff and community members attended an ice cream basics class at ÌÇÐÄVlog¹Ù·½ on May 26 with Chef Shane Tracey, executive chef at King Estate Wineries and part-time baking and pastry instructor at ÌÇÐÄVlog¹Ù·½.
This free class was sponsored by ÌÇÐÄVlog¹Ù·½â€™s Culinary Arts & Hotel/Restaurant/Tourism Management (CAHRTM) Student Club. The class covered developing recipes and bases, as well as making four products: two ice creams, one sherbet, and one sorbet.
In addition to the hands-on experience making ice cream, sherbets, and sorbets, attendees were treated to a miso soup created by students Linda Hur and Zoe Curtis. A previous free workshop sponsored by the CAHRTM Student Club featured chocolate-making.
